			<content:encoded><![CDATA[<p>For dinner the other night we had a salmon steaks, yams, and stuffed bell peppers.</p>
<p>You will need:<br />
fresh yams<br />
large bell peppers (that will sit still on there bottom or on there side)<br />
rice<br />
cheese<br />
butter<br />
fresh salmon steaks<br />
1 fresh lemon<br />
salt &#38; pepper<br />
cinnamon<br />
McCormick Lemon &#38; herb seasoning<br />
<span id="more-154"></span>To prepare:</p>
<p>Stuffed Bell pepper</p>
<p>1. rinse bell pepper, cut off top &#38; clean out the inside<br />
2. make rice according to directions on package &#38; then season to taste with butter &#38; salt<br />
3. when rice is dune place about a table spoon in the bottom of pepper<br />
4. then place a small piece of cheese on top of the rice<br />
5. place more rice on top of the cheese and fill pepper to the top with rice<br />
6. top rice with another piece of cheese.<br />
7. place on a cookie sheet and in a preheated oven until the cheese on top is melted</p>
<p>Yams</p>
<p>1. rinse yam and scrub clean if needed<br />
2. poke the yam with a fork on all sides<br />
3. place in a dish with a little bit of water and heat in microwave or oven until you can stick a fork into it smoothly (cooking time will very do to size of yam and the temp of the heat source<br />
4. plate and cut in half and season to taste with butter, salt, and or cinnamon (or you can do cinnamon &#38; sugar mix)</p>
<p>Salmon Steak</p>
<p>1. gently rinse salmon<br />
2. place on plate or cutting board so that you can season<br />
3. squease fresh limon juice on to both sides of salmon<br />
4. sprinkle both sides with McCormick Lemon &#38; Herb seasoning<br />
5. place on hot grill or skillet and let it cook on one side (Note: the fish will start turning white, and when the bottom half has turned white and has color on the bottom then flip)<br />
6. flip salmon and let it cook on the other side until the bottom has turned color also, usually you cook the fish for about 4 min. on both sides</p>

<p>3  8 oz packages of <em><strong>cream cheese</strong></em><br />
16 oz cup of <em><strong>claw crab meat</strong></em> (I use this instead of lump crab meat because it has more flavor and it is cheaper) Everyone likes it.<br />
2 tablespoons of <strong>Old Bay </strong>(or to taste)<br />
1 teaspoon of dry mustard</p>
<p>French Bread for dipping or anything else that you would like to dip into it!</p>
<p>Step 1: cube cream cheese<br />
Step 2: place cream cheese into hot saucepan (Note make sure that pan is on low heat or the cheese will burn and this can happen fast)<br />
Step 3: slowly melt cheese (stirring frequently)<br />
Step 4: once cheese is melted add all of your other ingredients<br />
Step 5: blend well and make sure that crab dip is heated all the way through<br />
Step 6: don&#8217;t forget to taste test (add more <strong>Old Bay</strong> if needed)</p>

<p>Grilled Salmon Steaks</p>
<p>First I squeezed a lemon over both sides of the salmon<br />
Then sprinkled a little bit of salt, pepper, and my Pampered Chef Citrus &amp; Basil Rub on both sides<br />
Place on hot grill (temp. was at 350) cooked until it was golden brown then flipped (fish should turn white in color all the way through) let brown on other side<br />
It should only take about 4 min. on each side (always check to make sure it is dune)</p>
<p>Sautéed Veggies</p>
<p>Heat skillet on med. heat<br />
Add a table spoon of butter<br />
Add your veggies<br />
Season with salt &amp; pepper or with any other spices that you would like<br />
Cook for just a few min.</p>
<p>Peaches</p>
<p>I cheated on the peaches, and used caned peaches. Caned peaches have a different texture then the fresh. Besides the fresh take more work in prep them. They where Dole peaches in the plastic bottle.</p>
