Aaron likes it and if I can get Aaron to eat a frozen dinner it must be good. He doe’s NOT eat frozen dinners (TV try dinners). It feeds two and takes about 10 min. to cook. Love it.

What’s for dinner? The other night we had BLT’s for dinner and I learned a great tip for cooking the bacon. I love to fry mine but it can get very messy if it is not dune in a deep pot. So to salve this problem I turn on my oven to 350 deg. Then I spry a cookie sheet with a nonstick cooking spray. Make sure that you spray it well. Place bacon on cookie sheet and place in oven. Let it cook for a few min. then flip and cook on the other side. Keep close eye on it because it will cook fast. Enjoy.

What’s for dinner? For Valentine’s Day dinner I made a grilled salmon steak, sautéed veggies and peaches on the side.

Grilled Salmon Steaks

First I squeezed a lemon over both sides of the salmon
Then sprinkled a little bit of salt, pepper, and my Pampered Chef Citrus & Basil Rub on both sides
Place on hot grill (temp. was at 350) cooked until it was golden brown then flipped (fish should turn white in color all the way through) let brown on other side
It should only take about 4 min. on each side (always check to make sure it is dune)

Sautéed Veggies

Heat skillet on med. heat
Add a table spoon of butter
Add your veggies
Season with salt & pepper or with any other spices that you would like
Cook for just a few min.

Peaches

I cheated on the peaches, and used caned peaches. Caned peaches have a different texture then the fresh. Besides the fresh take more work in prep them. They where Dole peaches in the plastic bottle.

What’s for dinner? Today we at a local restaurant. It is located in Ellicott City. I love this place! They serve Greek, Italian, and American food. They have had live music at times. Prices are good. The food is excellent. This is a great place to to take a date, the family or just go hang out and watch the game. But above all the service is excellent!

I had there fried Seafood plater witch came with a crab cake, 3 large butterfly shrimp, 3 oysters, and a pile of frys. and Aaron had there Gyro Platter. I have also had their cheesesteak witch was very good. So if you are looking for a new place to try you should check this place out. Tell Soto that I sent you.

What’s for dinner? Tonight we had pulled BBQ beef sandwiches with Utz potato chips on the side. I placed a beef roast in the crock pot and covered it with water. Then added a bottle of BBQ sauce maybe some salt and pepper. You can of course use any kind that you like. Leave in pot for several hours until meat is falling apart. It is best to do before you leave for work.

Make sure that you know how long you can leave this on. So just check the directions that came with the crock pot. Some come with timers. I am not an expert on crock pots, and I wouldn’t want you to burn down your house.

When you come home your dinner will be ready. Place meat on roll you may want to add a little bit of the BBQ sauce to the roll. Then add chips or french fries and enjoy!

I made Chili in the slow cooker yesterday. You just dump it all in the pot. I added 2 med. cans of crushed tomatoes and 1 can of tomato sauce. Then I diced up about 2 lbs of beef and dropped that in. Also added about 2 table spoons of country herbs. This is a mixture of several herbs. The brand is spice club. It comes in a clear glass bottle and has a grinder on top. If you don’t have this the list of spices in it is coarse sea salt, rosemary, parsley, oregano, basil, mint, sage and thyme. I also added chili powder to taste. Add herbs to your taste of course. I also added 1 can of light red beans and 1 can of white beans.

So just to break it down.

Step 1: put meat and tomatoes in pot let it cook until the meat is cooked through.

Step 2: add spices let simmer for 30 min. then taste. Add more spices if needed.

Enjoy!!

Tonight we had blue cheese burgers. They are easy to make. All you need are your rolls, ground beef, blue cheese and your fixings. Just take a baseball size ball of ground beef. Flatten it in your hand. Place pieces of blue cheese in the middle and then fold the beef over the cheese. Cheese should now be in the middle of your burger all covered up. Make sure that you flatten your burger into a patty once again. Now cook. Once it is finished build your burger just the way you like it.
